In all fairness, this Saltimbocca is the real thing - with Australian veal tenderloin, Italian parma, fresh American sage and Italian marsala; everyone else around fiddles with the ingredients. The risotto zafferano; Italian Gallo with Persian Saffron - as good as it gets!
